We hope you enjoy easy meal ideas on your Veg Mondays. The lunch ideas tend to be a little more portable and "on the run," but you can eat them for diner too!. An asterisk* means that we give a recipe for this meal in our "Recipes" section.

P.S. Be sure to have plenty of fresh fruits and vegetables with your meals.

Breakfast
  • Cereal with Soy Milk and Fruit
  • Oatmeal with Dried Fruit
  • Whole Wheat Toast with Nut Butter or Jam
  • Pancakes, maple syrup, and Field Roast apple sage sausages.  
  • Danishes: puff pastry filled with chocolate, fruit, or powdered sugar and vegan cream cheese.
  • Bagel w/ Tofutti flavored cream cheese (Tops carries it) or hummus
  • Soy yogurt w/ granola or cheerios

Lunch:

  • Hummus with Pita
  • Veggie Wrap
  • Grilled Veggie Sandwich
  • Black Bean and Corn Salad
  • Vegetable Soup with Crackers
  • Lentil Barley Soup
  • Bean Burritos (frozen or available at Taco Bell)
  • Falafel and Tabouleh
  • Pizza (from pizzeria, or homemade on pita bread or English muffins)
  • Sabra Red Pepper hummus, in a sandwich or a wrap, with a side of avocado.  
  • Sandwich (sliced field roast, veganaise and thin-sliced apple pieces or cucumber & hummus)
  • Mixed green salad w/(baked, flavored) tofu, chow mein noodles and mandarin oranges,
  • Vegetarian soup with veggie stock

Dinner (don't forget to add a green salad):
  • Pasta with Marinara Sauce and Vegetables
  • Vegetable Chili
  • Stir-Fry with Rice
  • Curried Vegetables with Rice
  • Grilled or Roasted Vegetables with Couscous
  • Tacos with Vegetarian Refried Beans
  • Split Pea or Lentil Soup
  • Veggie Burgers with Potatoes
  • Pasta or Rice Salad with Vegetables
  • Beans, Greens, and Pasta
  • Vegetable Stew
  • Middle Eastern Lentils*
  • Sesame Noodles*
  • Gobi (an Indian dish of cauliflower sautéed with oil, turmeric, and salt) with a whole wheat wrap and some dal and rice.  
  • Veggie stew with a side of garlic bread. 
  • Any kind of pasta and red sauce w/ Nate’s Meatless Meatballs
  • Grilled wraps w/ cut-up apples,  celery, tofu, cashews (or whatever is on hand)
  • Gardein “chicken” breasts w/ rice
  • Veggie stir-fry w/ Gimme Lean “sausage” or “beef”
  • Homemade pizza w/ Daiya cheese
