Veg Mondays was created by a group of Rochester, New York vegetarians who care about the earth, the animals, our health and want to share our joy with other open-minded people who'd like to make a difference and improve their health with compassionate choices.
Who We Are & Why We Chose to be Vegetarians:
Martha: "
Eating veg is unequivocally the best
change I have made in the course of my 51 years. I love it because
it enables me to make everyday choices that reflect my values.
Choosing veg foods over meat, eggs and dairy has so many benefits for
the environment, for the animals and even for people living across the
world that I couldn’t ignore them. My husband is a meat-eater
but over the years I have seen him making more and more veg choices
as well. There are so many more delicious meat alternative and veg
products than there used to be that finding veg foods we both like is
easy."
Carol: "
I am married with 3 adult
children. There are so many reasons to eat veg (using resources wisely on a
global scale, protecting the environment, caring about animals, being
healthy, caring that other people have enough to eat and are healthy)
that the sum total of all the reasons sealed the deal for us.
The entire family has been veg (and loving it!) for almost
20 years. Carol hopes that her ideas and tips for a veg lifestyle will
help you as you set out to eat veg one day a week."
Debra: "I have been vegetarian (no meat, fish,
or eggs) for almost 15 years and vegan for 4 years. I first became
vegetarian for spiritual reasons. A form of meditation I wanted
to learn required that I commit to a vegetarian diet. The requirement
was part of ahimsa, the practice of not harming or killing any
sentient being.
My son, who is
4 years old and has been vegan since the day he was born. He is
the best advertisement for a healthy vegan diet! He is nearly
a head taller than all of the other children his age (he is in the 99th
percentile for height), he’s smart, and he has the most amazing language
skills. He is just a healthy, happy, energetic little boy! He
understands what it means to be vegan and loves to meet other veg people."
Kathy:
"I have been a vegetarian (no meat, fish or eggs) for almost 7 years and have been trying to be vegan for the past 8 months. I stopped eating beef over 12 years ago because I felt beef was full of unhealthy hormones and I did not want cows to suffer, just so I could have a fast food hamburger. For many years, I had a fascination with what motivated vegetarians to limit their meals; in what felt like a radical way. I now realize, I was looking for the motivation I needed to make those choices for myself. I found the motivation when I read the book "Diet for a New America" by John Robbins. He described how animals in factory farms suffer and I was an overnight convert. I later learned the incredible health benefits from eating an animal-free diet, which was simply the icing on the cake!"
